Pastured Pork Box

My children LOVE the book Little House in the Big Woods. The author, Laura Ingalls Wilder, describes her family’s process of getting ready for winter in the late 1800’s. She writes, “..the little pieces of meat, lean and fat...seasoned, mixed, molded into balls...that was the sausage...the big jars of lard and the keg of white salt-pork out in the shed, and in the attic hung the smoked hams and shoulders....the hams and venison hung in their paper wrappings..."

As we read the story recently, I began to think about the hogs we had just brought to the butcher for our fall harvest. I remembered the hog we have picked out to be smoked for good old-fashioned pulled pork this week.
